Yes. All of our beef is dry aged for 15 days. During the dry-aging process, the beef is stored in a carefully controlled environment that allows natural enzymes to break down muscle fibers, enhancing tenderness while concentrating the rich, natural flavor of the meat.


We raise Katahdin sheep, a hair sheep breed known specifically for meat production rather than wool. Because they are not wool sheep, they produce less lanolin (wool fat), which can sometimes contribute to a stronger flavor or odor. This results in a cleaner, milder-tasting lamb that many customers prefer.
